Cannelloni di crepes con ragù di pesce spada
INGREDIENTI
per le crepes
2 uova
200 ml di latte
70 g di farina
30 g di burro
sale q.b.
prezzemolo
Per il ragù di pesce spada
500 g di pesce spada
200 g di passata di pomodoro
20 g di concentrato di pomodoro
10/12 pomodorini
1 spicchio d'aglio
½ bicchiere di vino bianco secco
150 g di ricotta
olio extra vergine d'oliva

Procedimento
Tagliate il pesce spada a cubetti. Lavate e tagliate i pomodorini.
In un tegame scaldate l'olio con lo spicchio di aglio. Aggiungete la passata di pomodori con i pomodorini tagliati e il concentrato di pomodoro sciolto in poca acqua. Mescolate e lasciate cuocere una decina di minuti. Aggiungete il pesce spada tagliato a tocchetti. Mescolate.
Sfumate con il vino bianco. Salate e lasciate cuocere pochi minuti. Ricordate di assaggiare per regolare la sapidità.
Mentre cuoce il sugo di pesce spada preparate le crepes.
In una ciotola sbattete con la frusta l'uovo con 15 g di burro fuso, il pizzico di sale e il latte. Aggiungete la farina poco alla volta, sempre mescolando.
Il burro rimasto utilizzatelo per ungere il padellino (cm 12/14 di diametro). Cuocete le crepes versando un mestolino di composto e rigirandolo una volta cotto.
Facoltativo: sul fondo del padellino potete mettere delle foglie di prezzemolo.
Lasciate raffreddare sia le crepes che il ragù di pesce spada.
Frullate 2/3 di ragù con la ricotta. Aggiustate di sale e mettete il composto in una sac a poche.
Farcite le crepes e disponetele nella/e teglia/e spennellate con olio. Spennellate anche la superficie delle crepese e aggiungete il ragù di pesce spada prima di infornare a 180° per circa 10/15 minuti.
Cannelloni crepes with swordfish ragout

70 g of flour
30 g of butter
Salt to taste.

For the swordfish ragout
500 g of swordfish
200 g of tomato puree
20 g of tomato paste
10/12 cherry tomatoes
1 clove of garlic
½ glass of dry white wine
150 g of ricotta
extra virgin olive oil

Method
Cut the swordfish into cubes. Wash and cut the cherry tomatoes.
In a pan, heat the oil with the garlic clove. Add the tomato puree with the chopped cherry tomatoes and the tomato paste dissolved in a little water. Mix and let cook for about ten minutes. Add the swordfish cut into pieces. Jumbled up.
Deglaze with white wine. Add salt and cook for a few minutes. Remember to taste to adjust the flavor.
While the swordfish sauce is cooking, prepare the crepes.
In a bowl, whisk the egg with 15 g of melted butter, the pinch of salt and the milk. Add the flour little at a time, stirring constantly.
Use the remaining butter to grease the pan (12/14 cm in diameter). Cook the crepes by pouring a ladle of mixture and turning it once cooked.
Optional: you can place some parsley leaves on the bottom of the pan.
Let both the crepes and the swordfish ragout cool.
Blend 2/3 of the ragout with the ricotta. Season with salt and place the mixture in a piping bag.
Fill the crepes and place them in the pan(s) and brush them with oil. Also brush the surface of the crepes and add the swordfish ragout before baking at 180° for about 10/15 minutes.
